Aussie Recipes
Australia Day is almost here. Enjoy some of these favourites.
Weis Bar Cheesecake
Ingredients
- 200g Arnott's Butternut Snap Cookies
- 35g (1/2 cup) shredded coconut
- 100g butter, melted, cooled
MANGO FILLING
- 4 medium mangoes
- 2 x 80g Weis Mango and Ice Cream bars
- 3 teaspoons gelatine powder
CHEESECAKE FILLING
- 250g cream cheese, chopped, at room temperature
- 125ml (1/2 cup) thickened cream (or coconut cream)
- 70g (1/3 cup) caster sugar
- 1 teaspoon vanilla extract
- 1 1/2 teaspoons gelatine powder
METHOD
Step 1
Process cookies and coconut in a food processor until cookies are coarsely crushed. Add butter and process to combine. Use the back of a spoon to firmly press the mixture into the base and sides of a 12 x 34cm loose-bottomed fluted tart tin. Place in the fridge for 20 minutes or until firm. Wipe the food processor clean.
Step 2
Meanwhile, cut cheeks from mangoes and remove skin. Cut Weis bars to separate the ice-cream half from the mango half. Transfer fresh mango and Weis mango half to the bowl of the food processor (reserve ice-cream in a bowl in the fridge until needed). Process mango mixture until smooth. Measure out 375ml (1 1/2 cups) mixture and return to processor. Reserve any remaining mixture for another use.
Step 3
To divide the tart base in half, fold a 32cm length of foil in half lengthways. Fold lengthways again, smoothing flat. Fold in half one more time to make a crease line and open to make an V-shaped piece of foil. Place the foil down the length of the tart tin with one side sitting flat on base of tin and other edge upright to create a wall. Place a ruler upright in the crease of the foil to support the foil wall. Scrunch up extra pieces of foil to wedge between ruler and side of tin, to hold the flattened foil and ruler in place (it will stabilise once the filling goes in).
Step 4
Place 60ml (1/4 cup) water into a small wide bowl and sprinkle the gelatine over. Set aside for 2 minutes to absorb and soften. Microwave gelatine mixture on High for 20 seconds, then whisk with a fork to dissolve. Set aside to cool slightly before adding to mango mixture. Process to combine. Transfer to a jug. With the tart tin sitting on a shelf in the fridge, pour the mango mixture into the tart shell, on the side without foil. Store in fridge for 1 hour or until set.
Step 5
Use electric beaters to beat the cream cheese, cream, reserved ice-cream, sugar and vanilla extract in a bowl until smooth. Dissolve gelatine in 1 1/4 tbs water as above. Add to the cream cheese mixture and beat to combine.
Step 6
Take tart shell from the fridge and carefully remove foil and ruler. Spoon the cheesecake mixture into the empty half and use the back of a spoon to gently spread, smoothing the surface. Return to the fridge for 1 hour or until set.
Step 7
Remove from fridge and stand at room temperature for 5 minutes to soften crust slightly. Cut into slices.

Barbecued Prawn Cocktail Burgers
Ingredients
- 500g peeled green prawns
- 2 teaspoons olive oil
- 1 garlic clove, crushed
- 1/4 cup (75g) mayonnaise
- 2 tablespoons tomato sauce
- 1 teaspoon horseradish cream
- 2 teaspoons lemon juice
- 2 teaspoons dill, chopped
- 320g pkt brioche burger buns, split, toasted
- 4 oak lettuce leaves
- 1 small red onion, thinly sliced
METHOD
Step 1
Combine the prawns, oil, and garlic in a medium bowl. Season. Heat a barbecue grill or chargrill on high. Cook the prawns for 2 mins each side or until cooked though.
Step 2
Meanwhile, combine the mayonnaise, tomato sauce, horseradish, lemon juice and dill in a small bowl. Season.
Step 3
Place the brioche bases on serving plates. Top with lettuce, prawns, onion and mayonnaise mixture. Top with brioche tops to serve.

Tim Tam Lamington Balls
Ingredients
- 2 x 200g packets Tim Tams
- 1/3 cup macadamia nuts, toasted
- 2 tablespoons desiccated coconut
- 395g can sweetened condensed milk
- 200g block dark chocolate, chopped
- Extra 1 cup desiccated coconut
METHOD
Step 1
Place Tim Tams and macadamias in a food processor. Process until mixture resembles fine crumbs. Transfer to a bowl. Stir in coconut and condensed milk until well combined.
Step 2
Roll level tablespoons of mixture into balls. Place on a baking tray lined with baking paper. Refrigerate for 1 hour or until set.
Step 3
Place chocolate in a microwave-safe bowl. Microwave on HIGH (100%), stirring with a metal spoon every 30 seconds, for 1 to 2 minutes or until smooth.
Step 4
Dip the end of 1 skewer into melted chocolate. Push dipped end of skewer halfway into 1 ball. Repeat with remaining skewers, chocolate and balls. Refrigerate for 10 minutes.
Step 5
Place the extra coconut in a shallow bowl. Re-melt chocolate, if needed. One at a time, dip the balls in the chocolate to coat. Lift balls, allowing the excess chocolate to drain. Roll in coconut to coat. Return to tray (see note). Refrigerate balls for 20 minutes or until set. Serve.

Christmas Recipes
It's the most festive time of the year and here are some great recipes to help you celebrate.
Christmas Fudge
Ingredients:
- 395g can sweetened condensed milk
- 1 cup brown sugar
- 2 tablespoons glucose syrup
- 125g butter, chopped
- 180g dark chocolate, finely chopped
- 1/2 cup bottled fruit mince
- 1/3 cup dried cranberries
- 1/2 cup chopped dry-roasted hazelnuts
Method:
Step 1
Grease pan a 4cm deep, 20cm (base) square cake pan. Line base and sides with baking paper, allowing a 2cm overhang on all sides.
Step 2
Place condensed milk, sugar, syrup and butter in a saucepan over low heat. Cook, stirring, without boiling, for 10 minutes or until mixture is glossy and sugar has dissolved.
Step 3
Increase heat to medium-low. Bring to a simmer, stirring. Cook, stirring, for 6 to 8 minutes or until mixture thickens and comes away from side of pan. Remove from heat. Stir in chocolate, fruit mince, cranberries and hazelnuts until combined and chocolate melted. Spoon into prepared pan. Smooth top. Set aside for 30 minutes. Cover with plastic wrap. Refrigerate for 6 hours or until firm.
Step 4
Cut into 2.5cm pieces. Serve.

Spiced Rum and Apricot Glazed Ham
Ingredients:
- 7kg whole leg ham, on the bone
- Whole cloves, to decorate
- Bay leaves, to decorate
- Fresh rosemary sprigs, to decorate
- Rum & Apricot Glaze
- 370g jar apricot conserve
- 125ml (1/2 cup) spiced rum
- 2 tablespoons barbecue sauce
Method:
Step 1
Preheat the oven to 180C/160C fan forced. Place an oven shelf in the lowest position and remove the other shelves.
Step 2
Use a small sharp knife to cut around the ham shank, about 10cm from the end. Run the knife under the rind around the edge of the ham. Carefully lift off the rind in 1 piece, running your fingers between the rind and fat. Wrap the rind in a damp tea towel and use it to store the leftover ham.
Step 3
Trim excess fat from ham, leaving a 1cm-thick layer. Score the ham in a diamond pattern, about 5mm deep. Stud the centres of the diamonds with the cloves.
Step 4
Pour 250ml (1 cup) water into a large roasting pan. Place ham on a wire rack in the pan. Wrap the shank in foil.
Step 5
To make the glaze, heat the conserve, rum and barbecue sauce in a saucepan over medium heat, stirring often, for 8-10 minutes or until thickened slightly.
Step 6
Pour half the glaze over ham. Brush over surface to evenly coat. Bake for 30 minutes. Turn pan 180 degrees and roast ham, brushing with glaze every 15 minutes, for a further 1 hour or until ham is deep golden and sticky. Set aside for 15 minutes to rest. Place on a platter. Decorate with bay leaves and rosemary. Remove foil before carving.

Christmas Chocolate Bark
Ingredients:
- 2 tablespoons maple syrup
- 0g hazelnuts, roasted
- 1 teaspoon sea salt
- 200g dark chocolate, finely chopped
- 200g milk chocolate, finely chopped
- 30g walnuts, toasted, chopped
- 30g dried figs, thinly sliced
- 2 tablespoons glace orange peel, chopped
- 200g white chocolate, finely chopped
- 50g pomegranate seeds
- 10 frozen raspberries, sliced while frozen
- Small handful rose petals, dried, crushed
Method:
Step 1
Line 4 baking trays with baking paper. Bring syrup to the boil in a frying pan over medium high heat. Add hazelnuts and quickly swirl pan. Cook for 2-3 minutes until syrup is thick and nuts are glazed. Pour onto 1 prepared tray. Sprinkle with salt. Set aside to set. Coarsely chop.
Step 2
Melt dark chocolate in a heatproof bowl set over a pan of just simmering water (don't let bowl touch the water), stirring until smooth. Pour over 1 prepared tray. Thinly spread to a 10 x 25cm rectangle. Working quickly, sprinkle with hazelnut mixture. Set aside to set.
Step 3
Melt milk chocolate following method in Step 2. Pour over 1 prepared tray. Thinly spread to a 10 x 25cm rectangle. Working quickly, sprinkle with walnut, fig and peel. Set aside to set.
Step 4
Melt white chocolate following method in Step 2. Pour over remaining prepared tray. Thinly spread to a 10 x 25cm rectangle. Working quickly, sprinkle with pomegranate, raspberry and rose petals. Set aside to set.
Step 5
Peel away baking paper from bark. Cut each bark into 8 pieces. Store in an airtight container lined with baking paper until ready to wrap.

Fresh Spring Recipes
Spring is near, make the most of the new season with these delicious spring recipes and cocktails.
Honey lemon chicken salad
Ingredients:
Zest and juice of 1 lemon, (plus 1 tablespoon lemon juice, extra)
2 tablespoons honey
1/4 cup extra virgin olive oil
2 teaspoons wholegrain mustard
1 cup mint leaves, half the leaves finely chopped
1/4 cup flat-leaf parsley leaves chopped
Large handful of baby spinach
200g podded fresh or frozen broad beans
400g can chickpeas, drained
125g cherry tomatoes, halved
1/2 cucumber finely chopped
1/4 cup flat-leaf parsley leaves chopped
4 x 200g chicken breast, each sliced into thirds
200g podded fresh or frozen broad beans
1/2 garlic ciabatta loaf or sourdough, torn into small pieces
Method
Preheat grill to medium-high.
Step 1
Combine lemon zest and juice, honey, 1 1/2 tbsp of oil and chopped mint in a large bowl. Season with salt and black pepper. Add chicken, stir to coat. Place in the refrigerator for 10 minutes to marinate.
Step 2
Meanwhile, place broad beans in boiling water for 1-2 minutes. Drain and refresh under cold running water. Remove tough outer skins and set aside.
Step 3
Place garlic ciabatta or sourdough on a baking tray and grill for 4-5 minutes or until golden.
Step 4
Preheat a pan to high. Cook Chicken for 2-3 minutes each side until caramelised and cooked through.
Step 5
Toss broad beans, ciabatta, spinach, chickpeas, tomatoes, cucumber, parsley and whole mint leaves in a large bowl.
Step 6
Whisk together mustard and remaining olive oil (2 tbsp) and 1 tbsp of lemon juice. Season. Divide the salad among plates, pour dressing over salad and top with chicken. Serves four.

Spinach prawn and pesto pasta
Ingredients:
Pesto
2 cups baby spinach
1 cup basil leaves
1/2 cup parsley
1/2 cup chopped plum tomatoes
6 tbsp toasted walnuts chopped
1/3 cup parmesan cheese grated
1 garlic clove minced
2 tbsp olive oil
2 tsp lemon juice
1/2 tsp salt
1/2 tsp black pepper
Pasta
Barilla Penne pasta
450 grams large fresh prawns, peeled
300 grams fresh asparagus cut into pieces
1/2 cup multicoloured cherry tomatoes
1 tbsp olive oil
1 tbsp unsalted butter
1/4 tsp black pepper
1/4 tsp salt
Method
Step 1
Preparing pesto: bring a large saucepan filled with water to a boil. Add spinach and basil and cook 20 seconds. Remove spinach mixture to a bowl filled with ice water, let stand 30 seconds. Drain and pat dry with paper towels.
Step 2
Place parsley, plum tomatoes, walnuts, lemon juice, parmesan, salt and pepper in a food processor, until all ingredients finely chopped. Add spinach/basil mixture and 2 tbsp of oil, process to combine all and set aside.
Step 3
Add pasta to boiling water and cook according to package directions. Add asparagus to the pasta during the last 5 minutes of cooking. Drain pasta.
Step 4
Heat 1 tbsp of oil and butter in a large pan or work on medium-high until butter melts. Sprinkle prawns with salt and pepper. Add prawns to the pan and cook 1-2 minutes on each side or until done.
Step 5
Add the pasta/asparagus mixture to the large pan with the prawns. Stir in 7 tbsp of the pesto and the cherry tomatoes. Mix until all combined and divide pasta evenly among four bowls. (Use the remaining pesto for other meals and store in the refrigerator)

Strawberry Thyme Lillet Spritzers
Ingredients
175 ml Lillet Blanc, chilled
Prosecco or Champagne, chilled
4 strawberries thinly sliced
Sprigs of thyme
2 lemon wedges
Crushed ice
Method
Step 1
In 2 glasses, evenly distribute the Lillet Blanc. Add the juice of a lemon wedge to each glass and then add equal amounts of strawberry and thyme.
Step 2
Add about 1/3 cup of crushed ice to each glass and then top with Prosecco or Champagne and enjoy. Serves 2.

We all know that Road trips can be daunting with how to keep the kid's boredom at bay. Why not try some of these entertaining games when you're on your next trip.
I'm going on a picnic
This classic memory alphabet game is fun for all ages and can be played with only two players. Although it's certainly more fun, the more that get involved. Starting at the beginning of the alphabet the first player says "I'm going on a picnic and I'm bringing..." something that begins with A, such as apples. The second player repeats what the first person said, but adds something that begins with B. So they might say "I'm going on a picnic and I'm bringing apples and bananas." And so on. If someone forgets an item, he/she is out. To be fair, feel free to be lenient and give hints to younger players. The last player to be able to recite all the items on the list wins.
I Spy
This easy-to-learn game is perfect for young players and will keep them entertained for long periods of time. The directions are simple: One-person spies something and recites the line "I spy with my little eye," ending in a clue. Everyone else takes a turn trying to guess the mystery item. Winter Warming Recipes
Winter is here and that means rug up and stay warm with delicious winter warmer recipes. Here are some great recipes to try this wintertime.
Thai Green Chicken Curry
Ingredients:
- 1 tbs olive oil
- 1 tbs Ayam fish sauce
- 1 tbs brown sugar
- 2 kaffir lime leaves
- 300ml chicken stock
- 1/4 cup Valcom green curry paste
- 400ml can lite coconut milk
- 2 cups shredded, barbeque chicken
- 1 onion, sliced
- 100g green beans, trimmed and halved
- 1 green capsicum, sliced
- 1/4 cup coriander leaves, to serve with
- 2 limes, cut into wedges & 1 tbs of lime juice
- Basmati rice, to serve with
Method
Step 1
Heat olive oil in a large saucepan or wok on high. Cook the sliced onion for 2-3 minutes, until softened.
Step 2
Blend in green curry paste and cook and stir for 1 minute. Stir in chicken stock and lite coconut milk. Bring to boil on high. Reduce heat to low and simmer, covered for 10 minutes.
Step 3
Stir in chicken, green beans, capsicum and kaffir lime leaves. Simmer, uncovered for a further 5-7 minutes, until beans and capsicum are tender, and chicken is hot.
Step 4
Stir in fish sauce, lime juice and brown sugar. Taste and add more, if desired. Combine and stir for another 2-3 minutes.
Step 5
Remove from heat. Serve with steamed basmati rice and garnish with coriander leaves and lime wedges. Serves four.

Chocolate Bread And Butter Pudding
Ingredients:
- 16 sliced of fruit bread
- 1/3 cup (80ml) rum
- 30g softened, unsalted butter
- 1 cup milk
- 1 cup pure cream, plus extra to serve with
- 2 eggs
- 1 tsp pure vanilla extract
- 120 g dark cooking chocolate, broken into pieces.
- 1/2 cup caster sugar
- Icing sugar, to dust
Method
Step 1
Preheat the oven to 170C. Grease a square baking pan.
Step 2
Toast bread, spread one side with butter and cut slices in half. Place and overlap the bread in the dish to make 2 layers and drizzle with rum.
Step 3
Place dark chocolate in a saucepan with milk and cream and heat gently over medium heat, stirring until chocolate melts.
Step 4
Whisk the eggs, caster sugar and vanilla together until combined. Stir in the chocolate mix, then pour over the layered bread and let it sit for 10 minutes, allowing the bread to absorb.
Step 5
Bake for 35 minutes (the filling will be slightly runny), then let it stand for 5 minutes. Dust the pudding with icing sugar and serve with extra cream, if desired. Serves 6-8.

Minestrone Soup
Ingredients:
- 1 tbs olive oil
- 1 tbs tomato paste
- 400g can diced tomatoes
- 420g can cannellini beans, rinsed & drained
- 1 litre salt-reduced chicken stock
- 1 onion, finely chopped
- 1 stick celery, finely chopped
- 1 leek, halves lengthways & thinly slices
- 1 carrot, peeled & cut into dices
- 1 potato, peeled & cut into dices
- 100g green beans, cut into 2cm length
- 2 kale leaves, stems removes & finely chopped
- 2 tbs parsley, chopped
- 1 garlic clove, minced or thinly sliced
- 1/2 cup macaroni pasta
- Shaved parmesan cheese, to serve
- Warm crusty bread, to serve with
Method
Step 1
Heat oil in a large saute pan or wok over a medium heat. Add onion, celery and leek. Cook stirring for 5-6 minutes, or until leek is soft. Add garlic, carrot and potato, cook, stirring, for 5 minutes.
Step 2
Stir in tomato paste, until the vegetables are coated. Add diced tomatoes, stock and 1/2 cup of water. Bring to a boil and boil gently for 10 minutes.
Step 3
Add pasta, simmer for another 10 minutes, or until pasta and vegetables are almost tender.
Step 4
Add cannellini beans, kales and green beans, cook stirring for 2 minutes or until beans are cooked. Season to taste and garnish with parsley. Serve with parmesan and crusty bread, if desired. Serves 6.

After your tour, explore the Opera House on your end by spending some time in "The Lounge", exploring art and culture through technology and then get your iconic Opera House photo from outside! Make a Wish Partners with ULTIQA
ULTIQA is proud to announce a two-year partnership with Make-A-Wish Australia, driven by bookings, memberships and holiday interest through both their retail and lifestyle business arms.
ULTIQA will donate a minimum of $150,000 to Make-A-Wish over the term, with further fundraising initiatives in place through our online accommodation booking engine and holiday membership, bourgeoning the donations. Our 2 children aged 8 & 11 came with and were so excited to see the array of facilities on offer. There was an indoor pool, tennis court, mini golf and a beautiful lagoon to kayak on in the centre of the resort.

Autumn Recipes
Autumn brings with it beautiful seasonal produce that is perfect for warming up those cool autumn nights. Here are some great recipes to try this season.
Pesto chicken and vegetable traybake
Ingredients:
- 1 zucchini, thickly sliced
- 1 small eggplant, cut into 3cm pieces
- 1 red capsicum, roughly chopped
- 2 baby fennel, trimmed, quartered
- 1 tablespoon extra virgin olive oil
- 1 lemon, quartered
- 25g butter, softened
- 2 tablespoons sun-dried tomato pesto
- 4 chicken marylands
- 400g can cannellini beans, drained, rinsed
- 1/2 cup chopped fresh basil leaves
Method
Step 1
Preheat oven to 180C/160C fan-forced.
Step 2
Place zucchini, eggplant, capsicum and fennel in a large roasting pan. Drizzle with oil. Turn to coat. Season with salt and pepper. Place lemon on vegetables.
Step 3
Combine butter and pesto in a small bowl. Using a sharp knife, make 4 x 1cm-deep cuts across the top of each piece of chicken. Rub 3/4 of the pesto butter over chicken.
Step 4
Place chicken on top of vegetables. Roast for 50 to 55 minutes or until chicken is browned and cooked through, and vegetables are tender.
Step 5
Transfer chicken to a plate. Drain any excess oil from vegetables. Add beans and basil. Toss to combine. Serve chicken and vegetables with remaining pesto butter.

Plum and vanilla clafoutis
Ingredients:
- 1 tablespoon caster sugar
- 4 plums, halved, stoned
- 4 Australian Free Range Eggs
- 1/2 cup (110g) caster sugar, extra
- 3/4 cup (185ml) milk
- 2/3 cup (100g) self-raising flour
- 1 teaspoon vanilla bean paste
- 30g butter, melted
- Icing sugar mixture, to dust
- Ice-cream, to serve
Method
Step 1
Preheat oven to 180C. Grease a 5cm-deep, 17cm (base measurement) pie dish. Sprinkle with caster sugar, shaking out any excess sugar.
Step 2
Place the plum, cut-side up, in the prepared dish. Whisk the eggs, extra caster sugar and milk in a bowl. Add the flour, vanilla and melted butter and whisk to combine. Pour the egg mixture into the dish. Bake for 40-45 mins or until puffed and golden. Stand for 5 mins to cool slightly. Dust with icing sugar and serve with ice-cream.

Sticky ginger chicken with peach salsa
Ingredients:
- 1/3 cup ginger marmalade
- 2 tablespoons Worcestershire sauce
- 1 garlic clove, crushed
- 1/2 teaspoon dried chilli flakes
- 1 tablespoon extra virgin olive oil
- Olive oil spray
- 4 single chicken breast fillets
- Lime halves, to serve
- Steamed green beans, to serve
- Cooked rice, to serve
Peach Salsa
- 5 yellow peaches, stones removed, cut into 1cm pieces
- 1 avocado, cut into 1cm pieces
- 1 small red onion, finely chopped
- 2 tablespoons finely chopped fresh coriander leaves, plus extra sprigs to serve
- 2 tablespoons lime juice
- 1 tablespoon extra-virgin olive oil
Method
Step 1
Combine marmalade, sauce, garlic, chilli and 2 tablespoons water in a medium frying pan over medium heat. Cook, stirring occasionally, for 4 to 5 minutes or until mixture thickens.
Step 2
Meanwhile, spray chicken with oil. Season with salt and pepper. Heat a barbecue hotplate on medium heat. Cook chicken for 5 to 6 minutes each side or until browned and cooked through. Transfer chicken to marmalade mixture. Turn to coat. Set aside.
Step 3
To make the peach salsa, combine all ingredients in a medium bowl. Season with salt and pepper.
Step 4

Located on top of the Oasis shopping centre, the apartment comes with its own secure covered parking space. The apartment was spacious, clean and the views were exceptional.
The staff were friendly and helpful. The facilities were first class including a beautiful pool, gym and tennis court. Right across the road is the stunning Kurrawa Beach and there a myriad of cafes and restaurants downstairs. It was central to both Surfers Paradise and the Gold Coast Airport.

Irresistible Easter Recipes
Time for treats
It wouldn't be Easter with out the decadent treats enjoyed with loved ones. Here are some delicious recipes to try this Easter!
Hot cross bun chocolate bread and butter pudding
Ingredients:
- 6 hot cross buns, split in half
- 60g butter, at room temperature
- 90g (1/4 cup) raspberry jam
- 12 squares (about 120g) dark chocolate
- 330ml (1 1/3 cups) milk
- 250ml (1 cup) pouring cream
- 4 eggs
- 2 teaspoon vanilla extract
- 100g fresh raspberries
- 70g Cadbury Mini Eggs
Method
Step 1
Preheat oven to 180C/160C fan forced. Grease a 2.5L (10 cup) ovenproof dish with melted butter.
Step 2
Spread the cut sides of each bun with butter. Spread the base halves with jam and top with a few pieces of chocolate. Place the buttered halves back on top, slightly off-centre so a little of the bun on the base is exposed. Place in prepared pan, slightly overlapping.
Step 3
Whisk together the milk, cream, eggs and vanilla in a jug. Pour over the buns and set aside for 30 minutes to soak.
Step 4
Sprinkle with the raspberries and mini eggs. Bake for 45 minutes or until the pudding is set.

Easter Bark
Ingredients:
- 300g milk chocolate melts
- 125g pkt small candy-coated Easter eggs
- 1/2 cup Coles Rainbow Mallows
- 1 tablespoon coloured sprinkles
Method
Step 1
Line a large oven tray with baking paper.
Step 2
Place the chocolate in a heatproof bowl over a pan of simmering water. Cook, stirring occasionally, for 5 mins or until chocolate melts and is smooth. Pour the chocolate onto baking paper and spread out to a 4mm-thick 25cm x 32cm rectangle.
Step 3
Sprinkle with the Easter eggs, marshmallows and sprinkles. Stand at room temperature for 1 hour or until set. Cut into large shards to serve.

French toast fingers
Ingredients:
- 4 Coles Bakery Hot Cross Buns, day-old
- 2 Coles Australian Free Range Eggs, lightly whisked
- 1/3 cup (80ml) milk
- 2 tablespoons thickened cream
- 1 tablespoon caster sugar
- 1 teaspoon vanilla bean paste
- 20g butter
- 2 tablespoons caster sugar, extra
- 1/2 teaspoon ground cinnamon
Method
Step 1
Use a small serrated knife to cut each bun in half. Cut each bun half into 1.5cm-wide batons.
Step 2
Whisk the egg, milk, cream, sugar and vanilla in a large bowl.
Step 3
Melt half the butter in a large frying pan over medium heat. Add half the bun batons to the egg mixture and gently toss to coat. Set aside for 1 min to soak. Add to the hot pan and cook for 30 secs-1 min each side or until golden brown all over and heated through. Transfer to a plate lined with paper towel. Repeat with the remaining butter, bun batons and egg mixture.
Step 4
Combine the extra sugar and cinnamon in a small bowl. Sprinkle cinnamon sugar evenly over the warm bun fingers. Serve immediately.

Here are some tips to perfect that holiday picture:
1. A good quality camera goes a long way
The pictures you take help you remember great moments in your life for a lifetime, so the better the quality the more enjoyable they will be to look at over time.
2. Lighting
There is nothing worse then getting home and you can't see the beautiful smile on your friends and family's face because you took the picture in bad lighting. Play around with your camera settings before you head on holiday, so you know which are best for daylight and how to shoot at night. If shooting in the daylight watch for shadows on faces.
3.The perfect picture isn't perfect
The best holiday snaps are often the candid moments. Whether it's the little ones first time at the beach and they decide sand would be a tasty treat or uncle bob chasing the kids around the lawn these are the moments you will look back and laugh about. Have the camera with you wherever you go and be ready to snap when a candid moment arrives.
4.Take a tripod
Whether you travelling as a couple or a family its sometimes hard to get the whole group in the image. Taking a tripod and setting the camera to self-timer means no one misses out! It also means you don't have to rely on strangers to get that happy snap.
5.Take multiple images of the same photo
This one is particularly important if you have people in the picture. Someone might blink, the kids scratch their face and the list goes on. The more times you take it the more chances you will have to get everyone looking decent.

Aussie Favourites
For Australia Day
Australia Day is on a long weekend this year and what better way to celebrate than with some Australian favourites.
Jaffa lamingtons
A blend of two of our nations famous flavours.
Ingredients
- 4 cups pure icing sugar, sifted
- 1 cup desiccated coconut
- 1/2 cups cocoa powder, sifted
- 6 extra large eggs
- 20g butter, softened
- 1/2 cup marmalade
- 3/4 cups caster sugar
- 3/4 - 1 cup boiling water
- 300ml Bulla whipping cream
- Zest of 1 orange, finely grated
- 1/2 cup self-raising flour, sifted
- 1/2 cup plain flour, sifted
- 1/2 cup cornflour (wheaten)
- 20g butter, melted
- 2 tablespoon boiling water
- 1 cup shredded coconut
Method
Step 1
Preheat oven to 200C (180C fan forced). Lightly grease a 30cm x 20cm lamington pan and line the base and sides with baking paper allowing a 5 cm overhang. Beat the eggs, sugar and orange zest in a medium sized bowl with an electric mixer on high speed for 8-10 minutes or until pale and fluffy.
Step 2
Triple sift flours into a bowl. Sift combined sifted flours over egg mixture and fold through until combined. Gently pour the melted butter and boiling water down the side of bowl and fold through egg and flour mixture. Spoon batter into prepared pan and bake for 25- 30 minutes or until just golden and firm to the touch. Allow sponge to cool in pan for 10 minutes, turn onto a cooling rack covered with a clean tea towel. Allow to cool completely and ideally store overnight in an airtight container. The following day trim off the outside edges, leaving the top and bottom intact. Cut into 5cm squares. (Should be 24 cubes)
Step 3
Place the icing sugar and cocoa into a shallow medium sized bowl (suitable for dipping the cake cubes). Combine boiling water and butter stirring until butter is melted. Gradually adding enough liquid to the sugar and cocoa, stirring to form a smooth paste; should be thick enough to coat your finger tip when dipped in. Combine the two coconuts on a tray. Using 2 forks, dip 1 cube of cake in icing. Shake off excess. Place on a wire rack over a baking tray. For 2 - 3 minutes until they stop dripping. Coat the chocolate coated cakes in coconut and place on a baking paper lined tray until they are dry or icing has set.
Step 4
Whip cream until firm peaks form, spoon into a pipping bag with a plain (1cm nozzle). Using a serrated knife cut the cakes half way, hold open and spoon in a teaspoon of marmalade and pipe in cream. Place on a serving platter and repeat with remaining lamingtons, marmalade and cream.

Mushy Pea Mash
Ingredients
- 2 cups Massel chicken style liquid stock
- 500g packet frozen peas
- 1 tablespoon milk
- 2 teaspoons extra virgin olive oil
- 1/4 teaspoon dried chilli flakes
Method
Step 1
Place stock in a saucepan over medium-high heat. Bring to the boil. Add peas. Cook for 5 minutes or until tender. Drain, reserving 1/4 cup stock.
Step 2
Transfer peas to a food processor. Add milk and reserved stock. Process until almost smooth. Season with salt and pepper. Spoon into a bowl. Drizzle with oil and sprinkle with chilli flakes. Serve. Variation: For a chunky pea mash, transfer cooked peas to a heatproof bowl. Add milk and reserved stock. Mash with a potato masher until combined and roughly mashed.

ANZAC Biscuits
Ingredients
- 165g (3/4 cup firmly packed) brown sugar
- 150g (1 cup) plain flour
- 90g (1 cup) rolled oats
- 75g (1 cup) shredded coconut
- 1 orange, zested
- 45g (1/3 cup) macadamias, finely chopped
- 150g butter, chopped
- 90g (1/4 cup) honey
- 1/2 teaspoon bicarbonate of soda
Method
Step 1
Preheat oven to 180?C. Place sugar, flour, oats, coconut, orange zest and nuts in a bowl. Using your fingertips, break up any lumps of sugar and combine well.
Step 2
Place butter and honey in a medium saucepan and cook, stirring continuously, over low-medium heat for 3 minutes or until butter is melted. Increase heat to medium and simmer for a further 2 minutes or until thickened and deep golden. Remove from heat. Immediately add bicarbonate of soda, whisk to combine, then whisk in 2 tablespoons water (take care as mixture will froth).
Step 3
Pour hot honey mixture over dry ingredients and stir until well combined. Cool for 10 minutes.
Step 4
Line 2 large oven trays with baking paper. To make perfectly round biscuits, place a 7cm egg ring or pastry cutter on a tray, spoon in 2 level tablespoons of mixture, then flatten to fill ring. Lift ring away and repeat to make 9 biscuits, 5cm apart, on each tray.
Step 5
Bake for 12 minutes or until golden. Cool on tray. Biscuits will keep in an airtight container for up to 2 weeks.

Macadamia-crusted Barramundi
Ingredients
- 2 1/2 cups roasted macadamia
- 1 1/2 cups fresh breadcrumbs
- 2 eggs, lightly beaten
- 2 teaspoons water
- 4 x 180g barramundi fillets
- 1/4 cup olive oil
- Lemon wedges, to serve
- aioli (see note), to serve
- Salad leaves, to serve
Method
Step 1
Process nuts and breadcrumbs in a food processor to fine crumbs. Remove to a shallow dish. Season with salt and pepper.
Step 2
Lightly beat eggs and water together in a shallow dish. Dip both sides of fish fillets into egg mixture. Coat with breadcrumb mixture, pressing on with your fingertips. Transfer to a plate. Cover with plastic wrap. Refrigerate for 20 minutes.
Step 3
Heat oil in a non-stick frying pan over medium heat. Cook fish for 3 to minutes each side or until golden.
Step 4
Serve fish with lemon, aioli and salad.

Christmas Dessert Recipes
Get ready to indulge
There is nothing like an indulgent dessert to finish of a Christmas Lunch or Dinner. Here are some of our picks:
Mocha tiramisu cups
Ingredients
- 1 1/2 cups strong black coffee, cooled
- 1 1/2 tablespoons Kahlua
- 300 grams cantuccini biscuits
- 500g mascarpone
- 1/3 cup thickened cream
- 2 tablespoons icing sugar mixture
- 2 teaspoon vanilla bean paste
- 2 cups double thick chocolate custard
- Chocolate-coated coffee beans, to serve
- Chocolate shards, to serve
Method
Step 1
Combine the coffee and Kahlua in a bowl. Reserve half the biscuits. Working with one at a time, dip the remaining biscuits into the coffee mixture and divide among six 300ml dessert glasses.
Step 2
Place the mascarpone, cream, icing sugar and vanilla in a bowl and use a wooden spoon to beat until smooth. Divide mixture among the glasses, spreading over the biscuits. Dip the reserved biscuits in the remaining Kahlua mixture and divide among the glasses.
Step 3
Divide the custard among the glasses. Place in the fridge for 30 minutes to chill and develop the flavours. Top with chocolate-coated coffee beans and chocolate shards.

White chocolate mud cake wreath
Ingredients
- 225g white chocolate melts
- 400g unsalted butter, chopped
- 300g caster sugar
- 200ml milk
- 4 eggs, lightly beaten
- 1 teaspoon vanilla extract
- 3 1/4 cups plain flour, sifted
- 1 1/2 teaspoons baking powder
- 500g strawberries
- 150g blueberries
- 150g raspberries
- Fresh mint leaves, to serve
White Chocolate Frosting
- 1/2 cup white chocolate melts
- 1/3 cup milk
- 225g unsalted butter, softened
- 1 1/2 teaspoons vanilla extract
- 5 cups icing sugar mixture
Method
Step 1
Preheat oven to 160C/140C fan-forced. Grease a 26cm round (base) springform pan. Line base and side with baking paper.
Step 2
Place melts, butter and caster sugar in a large microwave-safe bowl. Microwave on HIGH (100%), stirring with a metal spoon every 30 seconds, for 1 to 2 minutes or until melted and smooth. Stir in milk. Whisk in egg and vanilla until combined.
Step 3
Whisk flour and baking powder in a bowl to combine. Add to chocolate mixture, whisking until smooth. Pour mixture into prepared pan. Bake for 1 hour 30 minutes or until a skewer inserted into centre of cake comes out with moist crumbs clinging. Stand in pan for 10 minutes. Turn, top-side up, onto a wire rack to cool completely.
Step 4
Meanwhile, make White Chocolate Frosting. Place melts and milk in a microwave-safe bowl. Microwave on HIGH (100%), stirring with a metal spoon every 30 seconds, for 1 minute or until melted and smooth. Set aside to cool for 20 minutes. Using an electric mixer, beat butter for 2 minutes or until light and fluffy. Add cooled chocolate mixture and vanilla. Beat until combined. Gradually beat in icing sugar, 1 cup at a time, until combined. Continue to beat for 2 minutes or until light and fluffy.
Step 5
Using a sharp knife, trim the top of cake to level. Cut a 12cm circle out from centre of cake. Cover top and sides with frosting. Cut large strawberries in half and quarters. Keep small strawberries whole. Decorate top of wreath with berries and mint leaves. Serve.

Pavlova parfait
Ingredients
- 10 passionfruit
- 435ml (1 3/4 cups) milk
- 500ml (2 cups) pouring cream
- 315g (1 1/2 cups) raw caster sugar
- 6 egg yolks
- 1 teaspoon vanilla bean paste
- 2 egg whites
- 1 teaspoon cornflour
- 1 teaspoon white vinegar
- 300ml thickened cream
- 2 teaspoons icing sugar mixture
- Passionfruit pulp, extra, to serve
Method
Step 1
Grease the base and sides of a square 16cm (base measurement) cake pan and line with plastic wrap, allowing the sides to overhang. Place the pulp from 7 passionfruit in a food processor and pulse. Pour into a sieve set over a bowl. Use the back of a spoon to press on passionfruit to extract as much juice as possible. You should have about 125ml juice. Discard the seeds.
Step 2
Place the milk, pouring cream and cup caster sugar in a small saucepan over medium-low heat. Bring just to the boil. Use a balloon whisk to beat yolks and 1/2 cup caster sugar in a heatproof bowl until thick and pale. Slowly whisk in hot cream mixture.
Step 3
Strain the cream mixture into a clean saucepan. Add half the vanilla. Cook over low heat, stirring constantly with a wooden spoon, for 12 minutes or until thickened slightly and custard just coats the back of the spoon. Transfer to a heatproof bowl. Place over an ice bath, stirring occasionally, for 30 minutes or until cool. Slowly stir in the passionfruit juice and pulp from the remaining passionfruit. Cover with plastic wrap. Place in the fridge for 2 hours to chill.
Step 4
Meanwhile, preheat oven to 120C/100C fan forced. Line a baking tray with baking paper. Use electric beaters to beat the egg whites in a clean, dry bowl until firm peaks form. Gradually add the remaining caster sugar, 1 tbs at a time, beating constantly until sugar dissolves and the mixture is thick and glossy. Beat in cornflour and vinegar. Spoon onto prepared tray. Use a palette knife to spread to 2cm thick. Bake for 45 minutes or until crisp and dry. Turn oven off. Leave meringue in oven, with the door closed, to cool completely. Coarsely break meringue into pieces. Reserve 1/3 cup meringue.
Step 5
Churn cooled custard in an ice-cream machine for 20 minutes. Spoon one-third of ice-cream into prepared pan. Top with half the meringue. Spoon over half the remaining ice-cream. Top with the remaining meringue. Spoon over remaining ice-cream. Smooth the surface. Cover with plastic wrap and place in the freezer for 8 hours or overnight to set.
Step 6
Use electric beaters to beat thickened cream, icing sugar and remaining vanilla in a bowl until soft peaks form. Turn parfait onto a plate. Top with cream mixture. Drizzle with extra passionfruit. Top with reserved meringue.

With kids on a plane
Travelling with kids on a plane can be stressful but the better prepared you are, the better the trip.
Dress for Success
No kid wants to be uncomfortable while travelling. Put them in a nice comfortable tracksuit or pyjamas. Make sure they have layers so they can't complain about being too hot or too cold.

Food is your friend

DAY 1
- Arrive at Ngurah Rai International Airport

Spend the day in Uluwatu

UBUD

There are various options for water rafting in Ubud. Depending on how long you want to raft for and the level of thrill you are seeking there are many companies who can assist. We recommend speaking to the resort or your driver as they can recommend the best tour for you and often have special deals.
Sacred Monkey Temple
This is an absolute must! Walk through the lush monkey forest and get up close and personal with these beautiful and often cheeky creatures. Inside you can purchase bananas to hand feed the monkeys, they will often climb on you or try to play with your shoelaces.
Rice Fields
Visit the Tegalalang Rice Terrace where you can stop and watch the Balinese at work, and take in the picturesque landscape the fields create.
Tegenungan Waterfall
The biggest waterfall in Bali, a great place to take pictures and enjoy the tranquillity of the flowing water.
Volcano
Mt Batur is an active volcano near Ubud. Your driver will be able to take to some amazing spots where you can capture stunning shots of the Volcano from a distance. There is also a mountain trek up the Volcano which can be done and takes around two hours.
Saraswati Temple
Walk through the beautiful Saraswati Temple with luxurious decorative details and ponds filled with Lilly pads.
Rock Bar
Finish of the day with drinks and nibbles as the sun goes down at the breathtaking Rock Bar. Set at the bottom of a cliff overlooking the ocean often with there is Dj's or live music. It's a great way to watch the sunset and unwind from a busy day.
DAY 4
After a busy day in Ubud take a day to relax. Either by the resort pool or a variety of nearby beaches. Head out for a delicious dinner and some market shopping once the sunsets. This will be more enjoyable then walking through the markets in scorching heat. Some of the better markets are around Kuta square. Around the corner from Kuta Sqaure is the newly built Beachwalk Shopping centre which provides some great western dining options and high fashion stores as well.
DAY 5

Depending on your preference there are two great suggestions for spending your 6th day in Bali.
Waterbom Park
Waterbom Park is a great water park for kids and adults alike. It is a typical water park with all the thrills and rides the kid's dream of. However, it also has a focus on health and wellness where the adults can relax. There is reflexology, fish spa therapy, nail treatments and hair braiding.
Day trip to Nusa Lembongan

Car trips with the kids
Useful Tips
Travelling visit relatives? The chances are a car trip is in your future. So we have prepared our tips for keeping every family member happy.
1.Safety is paramount
Ensure any nagging issues with the car are ironed out before the trip. These problems will only get worse the more you drive the car. Make sure everyone is buckled in. If you're travelling with young children ensure that their car seats are installed properly.
Sleep is also a vital part of safe driving. Getting adequate sleep the night before is imperative for the driver to concertante. Having the kids well rested is also a huge bonus for a happy road trip.
2.Strategic Packing
There is nothing worse than constantly stopping to get things out of your luggage. This is why it is imperative to pack strategically. Having a separate bag for items that you will need on the trip packed on top of the luggage means the person in the back seat can easily reach over the seat to grab these items. Having separate bags for food and toys/electronics is a great idea.
It also great to have water, jumpers, hats, sunscreen and insect repellent handy. When it's time to stop for a break, the family can enjoy the fresh air. It's also a good idea to bring some pillows to allow tired children to sleep and separate siblings on the drive.
3.Entertainment
The important part of a successful car trip is good entertainment. Bored children are bound to end up fighting or in tears. Making the car trip fun and an extended part of the holiday will have kids jumping to get in the car. If you are travelling with babies ensure there are interesting toys dangling over their car seat to ensure that they have something to look at. For toddlers it's a good idea if there are two adults for one to sit in the backseat and entertain them. Reading them books, playing children's songs on the radio or even pointing out interesting sites as you drive past.
For older children nothing works better than buying them a new activity book for the road. Ensure the crayons are washable so any artwork to the back seat can be removed. Other ideas include Electronic games on the IPad or other devices. These are sure to keep them amused for a few hours. Playing games such as "I spy" is always entertaining for the whole family.
4.Food is your friend
Food is sure to keep the kids quiet. Ensure you pack foods that travel well and are a hit with the children. Some good ideas include Crackers, chips, sandwiches, apple slices, muesli bars, cookies and vegetable sticks. Don't pack things such as juicy fruits, yoghurts and juice poppers; these will only lead to a mess. Include some naughty treats too, so they associate the special treats with car trips only and become a tradition.
5.Regular Breaks
Regular breaks won't only help the driver refresh but the kids too. Stop at a park or a restaurant with a playground. This will allow everyone to stretch and run off some energy.
6.Pick the best time of day to suit your schedules
When going on a car trip, make sure it's planned around the best time of day for you. If children are able to sleep well in the car, it might be an idea to travel at night or early in the morning if this works for the driver as well. Another point is to ensure that travel is done either early in the morning or midday to miss peak traffic periods.

Spring recipes
With in season produce
Spring is upon us and with it brings some amazing produce. Here are some fantastic recipes for you to enjoy:
Salmon with Pea puree and Freekeh salad
Ingredients:
- 180g (1 cup) freekeh, rinsed, drained
- 490g (3 1/4 cups) frozen peas
- 2 tablespoons water
- 1 cup fresh mint leaves, coarsely chopped
- 1 cup fresh continental parsley leaves, coarsely chopped
- 1/2 cup fresh dill sprigs, coarsely chopped
- 50g pistachio kernels, toasted, coarsely chopped
- 4 (about 150g each) salmon fillets
- 1 teaspoon extra virgin olive oil
- Lemon wedges, to serve
Pickled Radish:
- 125ml (1/2 cup) red wine vinegar
- 1 garlic clove, peeled, bruised
- 2 tablespoons caster sugar
- 1 1/2 teaspoons sea salt
- 1/2 teaspoon whole black peppercorns
- 3 tablespoons water
- 1 small bunch radishes, thinly sliced
- 2 sprigs fresh dill
Dressing:
- 60ml (1/4 cup) extra virgin olive oil
- 1 1/2 tablespoons pickling juice
- 1 tablespoon fresh lemon juice
- 1 1/2 teaspoons Dijon mustard
- 1 garlic clove, crushed
- 1/4 teaspoons caster sugar
Method
Step 1
For the pickled radish, place the vinegar, garlic, sugar, salt, peppercorns and water in a small saucepan over low heat. Cook, stirring, for 3-4 minutes or until the sugar dissolves. Set aside for 5 minutes to cool. Place the radish and dill in a sterilised heatproof jar. Pour over vinegar mixture. Set aside to cool. Place in the fridge for at least 8 hours or overnight to pickle.
Step 2
Cook the freekeh in a large saucepan of boiling salted water, following packet directions, until al dente. Drain. Rinse under cold running water. Place in a large bowl and set aside.
Step 3
Meanwhile, place the peas and water in a microwave-safe bowl. Microwave on High for 4 minutes or until tender. Refresh under cold water. Drain. Reserve 1/4 cup peas. Add 1 tablespoon mint to remaining peas. Season. Use a stick blender to puree until smooth.
Step 4
For the dressing, combine all ingredients in a screw-top jar and shake to combine.
Step 5
Add parsley, dill, pistachios, remaining mint and 2/3 cup drained pickled radish to the freekeh. Toss to combine.
Step 6
Heat a large non-stick frying pan over medium-high heat. Drizzle the salmon with oil and rub to coat. Season skin well. Cook, skin-side down, for 3-4 minutes or until crisp. Turn and cook for a further 2 minutes for medium or until cooked to your liking.
Step 7
Serve salmon with pea puree, reserved peas, freekeh salad, lemon wedges and remaining radish pickle.

5-ingredient Dukkah lamb cutlets with broccoli rice
Ingredients:
- 200g vine-ripened cherry tomatoes
- 1 head broccoli, florets and stems coarsely chopped
- 12 Coles Australian Lamb Cutlets
- 2 tablespoons pistachio dukkah
- 200g tzatziki dip
Method
Step 1
Preheat oven to 200C. Line a baking tray with baking paper. Place tomatoes on tray. Season. Bake for 15-20 mins or until tomatoes begin to split.
Step 2
Meanwhile, place the broccoli in a food processor and process until finely chopped.
Step 3
Heat a large non-stick frying pan over high heat. Sprinkle both sides of lamb with half the dukkah.
Step 4
Cook for 2 mins each side for medium or until cooked to your liking. Transfer to a plate and cover with foil. Set aside for 5 mins to rest.

Spring vegetable lasagne
Ingredients:
- 30g butter
- 1/4 cup plain flour
- 1 1/2 cups milk
- 1 bunch asparagus, trimmed, thickly sliced
- 2 zucchini, cut into ribbons
- 2 green onions, trimmed, cut into 8cm lengths
- 1 bunch English spinach, trimmed
- 10 dried instant lasagne sheets
- 1 cup frozen peas
- 250g fresh ricotta
- 2 roma tomatoes, thinly sliced
- 2/3 cup chopped fresh basil leaves
- 1 cup grated pizza cheese
- Extra basil leaves, to serve
- Select all ingredients
Method
Step 1
Preheat oven to 200C/180C fan-forced.
Step 2
Melt butter in small saucepan over medium heat. Add flour. Cook, stirring, for 1 minute or until bubbling. Remove from heat. Gradually stir in milk until combined. Return to heat. Cook, stirring constantly, 3 minutes or until sauce boils and thickens. Remove from heat. Season with salt and pepper.
Step 3
Bring a medium saucepan of salted water to the boil. Add asparagus, zucchini and onion. Boil for 2 minutes. Remove with slotted spoon. Drain on paper towel. Add spinach to pan. Cook for 1 minute or until wilted. Remove with slotted spoon. Squeeze out excess moisture when cool enough to handle. Roughly chop.
Step 4
Cover the base of a 20cm x 28cm (8 cup- capacity) ovenproof dish with 2/3 cup white sauce. Layer 1/4 lasagne sheets trimming to fit. Layer asparagus mixture, peas and 1/3 ricotta. Top with 1/3 of remaining lasagne sheets, 1/2 spinach, and 1/2 remaining ricotta. Repeat. Top with remaining lasagne sheets and remaining white sauce. Arrange tomato and basil leaves on top. Sprinkle with cheese.
Step 5
Bake for 45 minutes or until golden and pasta is tender. Serve with extra basil leaves

"I wanted to drop you a line to express our complete satisfaction with our holiday in Fiji. The quality of accommodation at Fiji Palms was very satisfactory, the team was friendly and helpful and the location was just lovely. And aren't the local Fijians a beautiful people, lots of smiles and waves. But hey, driving the roads in Fiji is a real experience... do they have road rules or are they just suggestions? :-)
You probably remember our concerns about the effects of Cyclone Winston. The Coral Coast was very blessed to have avoided the worst although there were signs of damage but mainly vegetation and not too much of that either. It struck us that tourists and tour companies were avoiding the place like the plague, which we found disturbing, as this must have an effect of their economy just when they need it most.
Anyway, we just want to say thank you for all your help getting this sorted for us, we loved the holiday and can't stop talking about it.
Does either ULTIQA or RCI offer other properties in Fiji? We'd like to know which ones please and if there are any specials on offer... we'd like to go back.

In Brisbane
We often get asked about what there is to do in and around Brisbane, so here is our list of the top 10 things to do and see.
1. South Bank Parklands
South Bank Parklands boasts free entertainment, fine dining, BBQ Areas, The Cultural Centre, The Wheel of Brisbane and most infamous man-made Lagoon and a lovely modern feeling gateway to surrounding park spaces that serve as the ideal spot for a picnic, reading a book or letting the kids run around. Simply put, the South Bank area is the most pleasant overall atmosphere to be found in Brisbane that blends everything the city does well into a single focal point.
2. Arts and Museum at Brisbane Cultural Centre
Walking the line between "cheap" and "free" depending on whether there is a special exhibition on the entertainment-rich cultural district adjacent to Southbank waterfront provides a number of educational and entertaining opportunities for all. The Culture Centre has five main buildings, which include Queensland Art Gallery, Queensland Gallery of Modern Art, Queensland Museum, State Library and The Queensland Performing Arts Centre.
3. Lone Pine Sanctuary
The original "Home of the Koalas" Lone Pine Sanctuary is located just to the north of the Brisbane River with the option of a ferry up the Brisbane River or a bus trip only 15 minutes away. As the world's first and largest Koala Sanctuary with more than 130 koalas, Queensland is deemed the only state where you can cuddle a Koala, so you can come away with your memories by way of photos. The Sanctuary also boasts birds of prey, Tasmanian devils, reptiles and many more animals.
4. Story Bridge Climb
The Story Bridge is one of Brisbane's most prominent and recognisable landmarks on the River City, so why not take advantage of the supreme scenic viewpoint and enjoy a climb to the top. You are provided a headset, which provides commentary from your climb's guide and assists with pointing out local landmarks and historical icons.
5. Riverlife Adventures
Are you looking for activity that is a little more adventurous? Why not explore Brisbane's Kangaroo Point, with the likes of abseiling, rock climbing, kayaking and more to ignite your interest. The Kangaroo Point Cliff's host the 'abseiling in reverse'. A challenge that is more strenuous but it offers the same rewards.
6. Rail Museum
The Rail Museum is located around a 40-minute drive away from the city and is a perfect activity for the family. The workshops host a broad range of travel history from steam era all the way to the current electric models used today. Something for the younger kids is the "Day out with Thomas" event during school holidays.
7. Moreton Island
If you are looking at experiencing a breathtaking journey this begins at the mouth of the Brisbane River aboard a fast catamaran. A scenic trip just over an hour provides you with marine-life spotting on the way. On the Island, there are a variety of activities from fish feeding, ocean kayaking, stand up paddling, guided snorkelling in the infamous wrecks and many more on-land activities.
8. Brisbane River and Kookaburra River Queens
You haven't truly experienced the best of what Brisbane has to offer unless you have seen the city from the vantage point of the water and one of the most unique and tranquil ways for doing so is offered by Kookaburra River Queens. Many of Brisbane's icons take on an entirely new aspect when viewed from the water, such as the Story Bridge, Southbank Parklands and city skyline

Tips for Car trips
With the Kids
Are you planning a vacation? The chances are a car trip is in your future. So we have prepared our tips for keeping every family member happy.
1. Safety is paramount
Ensure any nagging issues with the car are ironed out before the trip. These problems will only get worse the more you drive the car.
Make sure everyone is buckled in. If you're travelling with young children ensure that their car seats are installed properly.
Sleep is also a vital part of safe driving. Getting adequate sleep the night before is imperative for the driver to concertante. Having the kids well rested is also a huge bonus for a happy road trip.
2. Strategic Packing
There is nothing worse than constantly stopping to get things out of your luggage. This is why it is imperative to pack strategically.
Having a separate bag for items that you will need on the trip packed on top of the luggage means the person in the back seat can easily reach over the seat to grab these items. Having separate bags for food and toys/electronics is a good idea.
Make sure you have water, jumpers, hats, sunscreen and insect repellent handy. When it's time to stop for a break, the family can enjoy the fresh air. It is also a good idea to bring some pillows to allow tired children to sleep and separate siblings on the drive.
3. Entertainment
The important part of a successful car trip is good entertainment. Bored children are bound to end up fighting or in tears. Making the car trip fun and an extended part of the holiday will have kids jumping to get in the car.
If you are travelling with babies ensure there are interesting toys dangling over their car seat to ensure that they have something to look at. For toddlers it is a good idea, if there are two adults, for one to sit in the backseat and entertain them. You can do this by reading them books, playing children's songs on the radio or even pointing out interesting sites as you drive past.
For older children nothing works better than buying them a new activity book for the road. Ensure the crayons are washable so any artwork to the back seat can be removed. Other ideas include Electronic games on the iPad or other devices. These are sure to keep them amused for a few hours. Playing games such as 'I spy' is always entertaining for the whole family.
4. Food is your friend
Food is sure to keep the kids quiet. Ensure you pack foods that travel well and are a hit with the children. Some good ideas include Crackers, chips, sandwiches, apple slices, muesli bars, cookies and vegetable sticks. Don't pack things such as juicy fruits, yoghurts and juice poppers; these will only lead to a mess. Include some naughty treats too, so they associate the special treats with car trips only and it becomes a tradition
5. Regular Breaks
Regular breaks won't only help the driver refresh but the kids too. Stop at a park or a restaurant with a playground. This will allow everyone to stretch and run off some energy.
6. Pick the best time of day to suit your schedules
When going on a car trip, make sure it is planned around the best time of day for you. If children are able to sleep well in the car, it might be an idea to travel at night or early in the morning if this works for the driver as well. Another point is to ensure that travel is done in either the morning or midday to miss peak traffic periods.

7 Corporate Travel Tips
Practical advice to follow
The following tips can make all the difference in making your trip that much more enjoyable.
1. Eat & Sleep Right
Eating the right food at the right time makes a big difference in how you cope with jetlag. It's because meals act as 'time clock' for your body -- so adjusting the amount and type of food you eat can make a big difference.
Try eating in the lounge prior to departure to avoid having a big meal on the plane. During the flight, choose a light meal that's easy to digest and not heavy on your stomach. Follow this with some tea to help aid digestion. In addition, try to drink as much water as possible to ensure you don't feel flat and dehydrated when you step off the plane Avoid the carbs, fatty foods, salty snacks and soda drinks.
I am a great fan of Melatonin, so pop a pill if that works for you ! If you do take something always check with a medical professional, don't just take anything.
When you land, have a high protein meal to help you stay active in a bid to switch to the new time zone.
2. Arrange Mobile Phone and Internet usage before you go
There is nothing worse than arriving at your destination turning on your phone and the no service symbol appears. Ensure your international roaming is switched on and your data plan has been upgraded to ensure no surprise billing charges appear on your return.
3. Take the appropriate plugs and adapters
Do your research of what adapters you need to have in the country you are visiting, that way you know all your items will be ready to go when heading out to meetings. Also try to minimise a tangle of cords by utilising a USB port plug as this usually can charge an array of devices.
4. Speed through security
Pick your security line wisely. This can save a lot of time. Pick the line with the most male business traveller's as they are more likely to have less baggage to check. They are also more likely to be prepared for the security check which means no delays with travellers unsure of the requirements.
5. Choose your Seat accordingly
If you know your landing time is close to an appointment time, pay extra to sit in the front row. This will ensure you are the first off the plane and can beat the rest of the plane to either the baggage carrousel or the taxi rank.
6. Sign up to Airline and Hotel loyalty schemes
If it's free to do so sign up to as many as possible. This will provide you with exclusive discounts and rewards such as free Wi-Fi or upgrades. Many times I have been upgraded to business class on an airline when they need more seats in economy.
7. Travel Light
We live in a world where Airlines prosper on Extras/Add on's. Travelling with only a carry on will decrease costs and time spent in airports, waiting at baggage carousels or finding out your baggage has taken a detour to a different destination. In order to do so you need to pack light. Decide what outfits you will be wearing while you are packing and try to get them to match with one pair of shoes that you can wear on the plane. If you need a jacket, wear it on you, this will save a lot of suitcase space.

The best Gold Coast beach walk
Amazing walks and hikes
Something that you should definitely take advantage of when coming to the Gold Coast, is the amazing walks and hikes.
You'll get to see some of the 'secret spots' that the locals enjoy whilst also enjoying a healthier holiday. These walks are our top picks and we walk them regularly ourselves. They are also extremely close to your resort and easy to find.
Burleigh beach strip, South to North
This walk starts on the south of Burleigh Heads. You firstly get a great view of the city from the headland of Burleigh and this is in sight as you walk towards north Burleigh along the beachfront. Once you have reached the end of the beach you can walk up to the North Burleigh lookout, which has spectacular views of the Tallebudgera estuary mouth, the lower part of Gold Coast city and the Tweed Coast. This walk is very easy as it is all on flat ground. It is around 5km in return distance (2.5km one way).
Currumbin Alley
Currumbin beach is an incredible part of the gold coast, and is not a regular tourist destination. 'The alley' is a local surfing hot spot. This beach walk is surrounded by hills, so that is another option if you are looking for a bit more of a challenge! The walk starts at 'The Alley' beach front and continues down to the end of the beach strip. This walk is only 3km in return distance. You'll also find a lot of amazing local cafes on your walk to grab a coffee or some breakfast!
Burleigh Headland
Burleigh headland is an incredible walk. There are two options for this walk, the lower path or the higher path. Both are pram friendly and are moderate intensity hikes. Both paths finish in the Tallebudgera creek, which is a great place for wave free swimming. Aboriginal tribes used to inhabit this land, there is a great sense of history in the rainforest. Info signs along the way teach about the history, wildlife and scenery. This is definitely our top pick when it comes to walks on the gold coast.
Broadbeach Oceanway
Starting at the Kurrawa surf lifesaving clubhouse, this path stretches to the edge of Surfers Paradise. This walk is close by and a really relaxing way to start the morning. A large playground is also right near the beginning of this walk, and the path is bike and pram friendly.

Sunshine Coast
The Sunshine Coast has more than beautiful beaches; it is home to many world-class attractions and activities for nature or adventure lovers alike.
ULTIQA Shearwater Resort is located a short drive from most attractions so why not check them all out while you are here. Below is a list of the top 5 things to do in the area.
Australia Zoo
Steve Irwin - AKA the Crocodile Hunter's legend lives on in Australia Zoo, with a team of passionate wildlife warriors looking after 100 acres and a wide range of birds, mammals and reptiles.
There is a "Crocoseum" where you can see crocodiles in clear water ponds and see how crocodiles live and behave in the wild. You can get up and close with iconic Australian animals like kangaroos and koalas and also have the opportunity to take a walk with the wombats or pat the tigers or feed the giraffes.
Australia Zoo is located in Beerwah just a short 25 minute drive from ULTIQA Shearwater Resort.
SEA LIFE Mooloolaba
Discover all things marine at Underwater World Sea Life Mooloolaba which is home to thousands of water loving animals and fish, including sharks, seals, turtles, stingrays, otters, sawfish, tropical fish and much, much more.
Walk underwater through the glass viewing tunnel and see Australia's marine in their own environment. Come within inches of huge sharks, rays and turtles or discover the 16 themed zones including the Seahorse Sanctuary, Seal Island and the Pacific Reef.
Sea Life is located in Mooloolaba just 30 minute drive from ULTIQA Shearwater Resort.
Glass House Mountains
Volcanic Peaks tower out of the ground and make the landscape picture perfect.The Glass House Mountains National Park offers many opportunities to explore and enjoy the natural surround. There are numerous walking tracks that lead through open forests to lookouts offering panoramic views, as well as challenging summit routes and abseiling and rock climbing opportunities.
But you don't have to walk, if you want some spectacular, close up views of the mountains then you just have to get in the car and explore the local back roads.
The Glass House Mountains are a 30 minute drive from ULTIQA Shearwater Resort.
Aussie World
Aussie World Theme Park is the only theme park north of Brisbane and has over 30 thrilling rides and attractions, which makes it fun for all the family.
If you're looking for thrills and excitement then you will find it all at Aussie World. There is something for everyone including a roller coaster, ferris wheel, dodgem cars as well as a collection of rides that will get your heart racing.
Aussie World is located in Palmview just a short 15 minute drive from ULTIQA Shearwater Resort.
Eumundi Markets
A trip to the Sunshine Coast is not complete without visiting the Eumundi Markets, held every Wednesday and Saturday. It is a mix where foodies and artists collide to bring the best of both worlds. In short The Eumundi Markets has a diverse and amazing range of art, craft, products, entertainment and local produce.
Eumundi Markets are a scenic 40 minute drive from ULTIQA Shearwater Resort.
Brisbane
Sir Thomas
Sir Thomas Brisbane Planetarium also has the kids looked after. It boasts a Cosmic Skydome, Display Zone, Mini Theatre and an Observatory. The Planetarium is also hosting shows for children which include; Perfect Little Planet, Secret of the Cardboard Rocket, Secret of the Dragon and Tycho to the Moon. It is open Tuesday through to Sunday. There's so much for everyone to enjoy and tickets start at $9.20 for a child.
Queensland Museum - Sciencentre
Kids can get lost in the wonder of science at the Sciencentre located in the Queensland Museum on the corner of Grey & Melbourne Street. They have action stations demonstrating five themes try it, use it, move it, see it, hear it. They also have exhibits relating to Earth, Water & Air.
Eat Street Markets
The markets are a colourful affair full of entertainment and more delicious food then you can imagine. Whether you've got a sweet or salty tooth, you are sure to find something to delight.
The markets run every Friday and Saturday night 4pm - 10 pm and are located on Hamilton Wharf, Northshore Brisbane. They are only a short 15 minute drive from the city.
QPAC - The Sound of Music
A great way to keep the kids busy is the sound of music, a stage show that all ages love. The favourites such as Do-Re-Mi, My Favourite Things and Sixteen Going on Seventeen will come to life. Shows take place throughout March & April in the QPAC Lyric Theatre, only a stroll from ULTIQA Rothbury hotel.
Gold Coast
Broadwater Parklands
A short 15 minute drive from the ULTIQA Freshwater Point Resort lies the Broadwater Parklands. Broadwater Parklands at Southport is the perfect spot for both our young and young at heart Resort Guests. For the kids the "Rockpool Water playground" is an absolute hit! Made up of shallow, wade-height pools with waterfalls and sprouting water animals. There are also a variety of pool areas and creek beds which fill and empty their contents on timers, ensuring the little ones will want to play for hours.
Washington Waters Park at the southern end of the Parklands boasts swings, giant lizards, a bike education track, mono rail peddle bikes and a flying fox. In addition it also has a special liberty swing for children with all abilities. However, prime real estate among the kids is the jumping pillow providing hours of bouncing fun.
Aqua Splash
In addition to all the fun and games in this beautiful Parkland, the newest attraction is the Aqua Splash water based inflatable obstacle course. The course sits in the Broadwater and welcomes both adults and children. As a parent if you think you would prefer to watch from the shore there is no need to worry as a life guard is on duty to keep all family members safe.
Themeparks
The Gold Coast is truly famous for fun and this is largely due to the Themeparks located in the northern region of the Gold Coast. All the parks are about an half an hour drive from both of our Gold Coast properties. Parks include Dreamworld, Whitewater World, Movie World, Seaworld and Wet 'n' Wild. There is so much to do at each park that they will take up an entire day for each one.
Q1 Observation Deck &Sky Point
The Q1 building is one of the tallest buildings on the Gold Coast and one of the world's tallest residential towers. The 360 degree observation deck can be found on the 77th level in the buzzing Surfer Paradise prescient. The lookout gives you a real perspective of how truly beautiful the Gold Coast is, from our never ending white sandy beaches to our pristine waterways you can take it all in.
Whether you start or end the day with a truly magnificent view, SkyPoint is a must do experience for the whole family. If you truly want a bird's eye view of the Gold Coast and all it has to offer then make extra sure to place SkyPoint at the top of your "to do list". However it is for the adrenalin junkies looking for that heart stopping moment don't overlook a SkyPoint climb, take a step into the open air at 70 meters above sea level and awaken your senses as you triumphantly conquer SkyPoint's highest summit. You are harnessed to a purpose-built safety rail system, you'll be guided up the outdoor walkway and enjoy uninterrupted views of the Gold Coast. Exercise you can do
In your hotel room
Staying fit on your holiday can be a struggle at times. You're away from home, eating different foods and you're trying to fit in activities and relaxation, while you can.
This means that sometimes, fitting in exercise can be the last thing you want to do. But we all know what happens once the holiday is over; we get home and realize our jeans fit a little too snug. It can be really hard to re-motivate yourself to get back into it after a holiday. Don't you worry; I have some really easy solutions for you!
There are so many ways that you can make your holiday a healthier one. From walking each morning, to making sure you don't overeat, but today we are going to go through a super quick, but effective, workout that you can do right in your hotel room. All these exercises use only body weight, which means you need almost no equipment, just some floor space. What you will need is a watch to keep track of time.
So lets get into it!
This workout consists of four simple (but effective) exercises. You are going to perform each movement as many times as you can in one minute, then move onto the next movement for the next minute, and so on. We are going to repeat this little circuit three times. You will get a few minutes of rest in between rounds, so make sure you try as hard as you can!
I will explain each movement in detail below, but here is how the workout will look:
- Air squats - 1 minute
- Spot Lunges - 1 minute
- Pushups - 1 minute
- Butterfly sit-ups - 1 minute
- Rest - 1 minute
Repeat x 3
Air squats
Squats work your legs and glutes. Make sure your chest stays up as you squat down, and your knees go over your toes. Try and get your buttocks as far down to the ground as you can for each squat.
Spot lunges
Step out one leg in front and touch your back knee to the ground. Making sure your chest stays nice and straight and try to keep your hands on your hips. Swap legs in between every rep.
Push-ups
Keep your elbows close to your body, to target more of your triceps. Make your chest touch the ground for each and every rep. If this is to hard, drop to your knees. We want each push-up to be controlled.
Butterfly sit-ups
Have your feet touching with your knees facing outward. Come all the way back to touch the ground behind you and then come up and touch your toes.
Try keeping track of the amount of reps you get through, and next time you do this workout, try and beat your score!

Big things in the air for South Africans

South African-based Vacation Management Services has made its first move into the Gold Coast market, snaring the management rights to Air on Broadbeach.
VMS took over this month from the building's original manager Jackwalk Pty Ltd, a company controlled by David Jackson and Noel Walker, in a dead understoond to be worth about $9 million. This brings to three the number of properties managed by VMS in the Pacific region. Managing director Mark Henry yesterday said plans were afoot to expand further once the latest acquisition had been bedded down in the next six to 12 months. "In the long term we would like to look at more luxury properties." But he said the first task would be to lift occupancy at Air, which is sitting around 70 per cent. "We have different distribution channels (to achieve that)," he said.
VMS, which set up its Australian base at Bundall four years ago, is a joint venture between the Beekman Brothers Group and RCI, a subsidiary of Wyndham Worldwide. The group has access to 75,000 members of The Holiday Club Group and manages 25 resorts worldwide. Air on Broadbeach was developed by Sofitel and Oasis shopping centre owner Thakral Holdings in 2005.
Mr Henry said VMS was looking for more Gold Coast acquisitions including new and existing properties. VMS, whose only other Australian property is at Port Macquarie, was focusing on key holiday destinations and the Sunshine Coast was shaping as fertile ground, he said. Recommended 7 Day Itinerary
Day 1
Arrive at Ngurah Rai International Airport
Ensure you have booked a transfer or a driver ahead of time to get you to your hotel or resort
Arrive at accommodation, unpack and unwind, enjoy the beauty of the apartment
If you haven't already got a driver let your resort recommend one as you will need one for the next week.
Head to Eat Street in Seminyak for a casual dinner and a bit of shopping if you feel up to it
Day 2
Spend the day in Uluwatu
Morning
Visit the Uluwatu Temple which is situated on the end of a cliff. The views are simply stunning.
Day
Relax the day away on one of these beautiful beaches:
- Padang Padang
- Dreamland (New Kuta Beach)
- Uluwatu
If the beach is not your style take advantage of many of the resorts who will let visitors use their facilities for the day. One of the best is Blue Point Bay Villas : Swim in their infinity pool set on the edge of a cliff overlooking the stunning Indian Ocean. They have meal and pool deals available for day visitors.
Another great place to spend the day is Finn's Beach Club. This is a stunning beach location. Entry is charged for the day and is around
Rp. 250,000 (approx. $25 AUD) for adults and Rp. 50,000 (approx. $5 AUD) for children. Your entry fee entitles you to sunbeds, kayaks, snorkelling equipment & stand up paddle boards, Towel and Wifi.
Afternoon/Evening
Uluwatu boasts some of the most beautifully located restaurants, a perfect way to end your day. Our picks include:
Jimbaran Bay - Enjoy dinner on the shore of Jimbaran Bay. There are various options to choose from all with a focus on fresh seafood.
Di Mare Karma Kandara Resort - Mediterranean dining 85 metres above the ocean, a fine dining experience with breathtaking views.
Single Fin - A laidback dining experience overlooking the best known surf spots in Bali - Suluban Beach. Lots of cocktails, salads and nibbles to choose from. A stunning location with a casual vibe if you don't feel like getting dressed up for the night.
Day 3
Ubud
A day spent well in Ubud requires a great driver (ask at resort reception or use your driver who picked you up from the airport, they are always happy to help and will wait for you while you enjoy yourself).
There is so much to do that it is sure to be a busy day.
Water Rafting
There are various options for water rafting in Ubud. Depending on how long you want to raft for and the level of thrill you are seeking there are many companies who can assist. We recommend speaking to the resort or your driver as they can recommend the best tour for you and often have special deals.
Sacred Monkey Temple
This is an absolute must! Walk through the lush monkey forest and get up close and personal with these beautiful and often cheeky creatures. Inside you can purchase bananas to hand feed the monkeys, they will often climb on you or try to play with your shoelaces.
Rice Fields
Visit the Tegalalang Rice Terrace where you can stop and watch the Balinese at work, and take in the picturesque landscape the fields create.
Tegenungan Waterfall
The biggest waterfall in Bali, a great place to take pictures and enjoy the tranquillity of the flowing water.
Volcano
Mt Batur is an active volcano near Ubud. Your driver will be able to take you to some amazing spots where you can capture stunning shots of the Volcano from a distance. There is also a mountain trek up the Volcano which can be done and takes around two hours.
Saraswati Temple
Walk through the beautiful Saraswati Temple with luxurious decorative details and ponds filled with Lilly pads.
Rock Bar
Finish off the day with drinks and nibbles as the sun goes down at the breathtaking Rock Bar. Set at the bottom of a cliff overlooking the ocean, it's a great way to watch
Day 4
After a busy day in Ubud take a day to relax. Either by the resort pool or a variety of nearby beaches.
Head out for a delicious dinner and some market shopping once the sunsets. This will be more enjoyable than walking through the markets in scorching heat. Some of the better markets are around Kuta square. Around the corner from Kuta Sqaure is the newly built Beachwalk Shopping centre which provides some great western dining options and high fashion stores as well.
Day 5
Spend a day at Bali Safari & Marine Park. The park brings together the most renowned animals from across the world and takes you on a safari adventure from Africa to Asia. Elephants steal the limelight in their own show where they perform tricks and audience members get the chance to get up close and personal with these majestic creatures. There is also a Bali Theatre where you can experience an impressive stage production showcasing the history and culture of Bali.
Day 6
Depending on your preference there are two great suggestions for spending your 6th day in Bali.
Waterbom Park
Waterbom Park is a great water park for kids and adults alike. It is a typical water park with all the thrills and rides the kid's dream of. However, it also has a focus on health and wellness where the adults can relax. There is reflexology, fish spa therapy, nail treatments and hair braiding.
Day trip to Nusa Lembongan
If a Water Park is not your idea of fun, take a day trip to the island - Nusa Lembongan. There are a variety of tour companies which offer day trips over to the island. It is simply paradise when you arrive and it gives the opportunity to really kick back and relax. Ask your resort or driver for the best tours offered as they often have exclusive deals with the operator.
Day 7
Relax at the Resort pool or head into to town for any last minute shopping until you are due to be at the airport for your return flight.

Technology Update
Upgrading our operational software
Today's world is driven by technology and all of us expect it to be at hand and accessible whenever we wish to access it.
And with this technology constantly changing and enhancing functionality it has resulted in the need for an upgrade of our systems.
ULTIQA Lifestyle to this end has encountered some technical challenges with both its website and phone system functionality of late.
We are currently working on upgrading the operational software & technology which, once installed, will deliver a smoother, more efficient website & telephone service. Implementation of the new software is a major undertaking and will be phased in from mid-November 2015 and should be finalized early January 2016. Whilst you might experience minor interruptions to some services during this period we will endeavour to keep them to a minimum. Members will be notified of all planned interruptions of service by email during the upgrade process.
We apologize for any inconvenience you might have suffered in the lead up or during the implementation stages. We are excited
by the changes and the improved level of service these will enable us to deliver. This will include the ability to search and book
your holidays online for all ULTIQA Lifestyle properties, including new filters to search through the large number of resorts on

Resort Updates
Port Pacific
From 1st July 2015 any exchange into Port Pacific Resort will incur a Utility charge of $20 per week or part thereof. This charge is payable at check-in.
Village Resort
The Board of Village Resort have removed the previous compulsory $20 service fee charged to every guest checking in and replaced this with a Utility charge for the power usage used in each bungalow. Each bungalow will have its own power meter. This fee is payable on check-out.
The resort will be carrying out refurbishments on the bungalows during two separate time frames
- 2nd May 2015 - 23rd May 2015
- 30th May 2015 - 20th June 2015
The resort will endeavour to make sure that guests will not be inconvenienced in any way.
